5 oz. of salmon oven baked with tomato dill sauce, served with asparagus, roasted red skin potato, arugula garden salad, & lemon mint olive oil dressing.

Ingredients:

  • 5 oz raw salmon 
  • 2 oz cooked asparagus
  • 4 oz cooked red skinned potato

Tomato Dill Sauce:

  • 2 oz diced tomato
  • 2 Tbsp olive oil
  • 2 cloves garlic
  • 2 leaves fresh basil
  • ¼ oz chopped dill

Arugula Salad:

  • 2 oz arugula
  • 1 oz romaine lettuce
  • 1 oz cherry tomato
  • 1 oz cucumber

Lemon mint olive oil dressing (2 oz):

  • 3 Tbsp olive oil
  • 1 Tbsp lemon juice
  • Chopped fresh mint (used ½ tsp)
  • Pinch garlic powder
  • Pinch salt
  • Pinch pepper
